Happy Sunday! We spent yesterday in the city catching up with friends and are all moving a little slow this morning. But, Harper slept in her crib for the first time last night (she’s almost 4 months now!) and we started the day off right with brunch outside and this avocado toast! It was sooo good that I wanted to share the details with you. Even the kids were asking for seconds 🙂
Ingredients:
- Bread (toasted or untoasted)
- Avocado
- Fried Egg
- Sliced tomato
- Microgreens (we used the Radish microgreens from a local farm but any microgreens or arugula would be great!)
- Mozzarella Cheese
- Red Pepper Flakes (skipped this step for the kids toast for course)
You can add as much or as little of each ingredient to your taste. I added extra cheese on the kids and extra spice for Eric’s.
On another note, I can’t believe our summer weekends are coming to an end already! We’ve been doing two things lately that have helped us enjoy the last of the summer days. One has been dining on our patio as much as possible. Some days we will have breakfast, lunch AND dinner al fresco. It’s the best. The kids have even helped with little tablescapes here and there which has been really fun! Who knew a 2 and 4 year old would love decorating a table so much? They must be my kids haha 😉
Another thing we have been doing is having cell phone free Saturdays. Our phones are turned off for the entire day and hidden away. No emails, work, social media, etc. We only intended to do this once a month but have enjoyed it so much that its becoming (almost) a weekly tradition.
I was thinking about writing a detailed blog post on how this has impacted us. It’s truly made a difference. Would anyone be interested in reading that?
