Cucumber Flavored Ice Cubes

Our MDW travel plans got put on hold so a relaxing weekend at home it was! Well, as much as we could relax with three little ones hopping in and out of blow up pools and sprinklers for 3 days!

These cucumber ice cubes have been a favorite for our entire family lately. They are SO easy to make and perfect to pop in a glass or water (or vodka!) for a refreshing drink. It’s a simple idea but one I wish I had thought of before.

Cucumber water is great for hot summer days and drinking it always reminds me of the spa.

I like to prep the night before so the flavor soaks in and use muffin tins for larger cubes.

Cucumber Ice Cubes

  1. Soak the cucumbers in a pitcher of water the night before (or at least for a couple hours to flavor the water).

2. Freeze the cucumber water 🥒 in muffin trays (this muffin pan has been great). You can add herbs or lemon juice in them too for a little extra flavor. I started my first herb garden over the weekend so I’m going to try adding basil or mint next time.

3. Add to a drink dispenser, glass of water (or vodka, etc.) and enjoy!

I like to store them in the freezer in a freezer safe container. Using parchment paper in between helps so they don’t stick together.

I did some gardening over the weekend and started a dresser makeover that I luckily found on Saturday. Our town opened up a little with sidewalk shopping (including a favorite consignment place!). It was great to get out of the house and feel a little sense of normalcy again in our community. We wore masks, and safely kept our distance of course.

The lemon ones are just as good! I squeezed lemon into the water, froze the water and have been using these almost every day. The kids LOVE them too. The think they are drinking lemonade 🙂
